Why not just use a saddle valve like the box kit comes with?
Because they fail. A saddle valve punches a needle into your pipe and clamps over the hole. We cut in a proper tee and a quarter-turn shutoff instead. It costs a bit more up front and it does not turn into a soaked subfloor down the road.

I have a well and hard water. Does that change anything?
